Vitello tonnato

Meat with tuna sauce
Recipe for 8 people.


  • 1 kilo of veal rotunda;
  • 2 glasses of dry white wine;
  • 1 onion;
  • 2 carrots;
  • 1 leg of celery;
  • sage, bay leaf, pepper.

For the sauce:

  • at least 2 eggs;
  • 100 gr of tuna in oil;
  • 2 tablespoons of capers;
  • an anchovy fillet.


Put a kilo of veal rotunda in two liters of hot water in a pot, add 2 glasses of dry white wine, an onion, 2 carrots, a leg of celery, sage, bay leaf and salt; bring everything to boiling until cooked (it should take about 45 minutes).

Leave the meat to cool in its cooking broth.

For the sauce, add at least 2 eggs to the mayonnaise, 100 grams of tuna in oil, 2 tablespoons of capers, the carrot in the broth, one anchovy fillet, everything chopped and possibly add a little white wine as well.
